For about four or five years, this has been one of my favorite smoothies. If you’re someone who would prefer if spinach tasted more like a milkshake than a vegetable, then this vanilla green smoothie is for you. This smoothie is as healthy as a salad, but it tastes like a sweet dessert. You can taste the spinach a little bit, but it’s barely noticeable.

As you can hopefully tell from this photo, this smoothie has a nice frothy head on it.
This smoothie contains 1 cup of baby spinach. Even though that only amounts to 7 calories, it’s still a good source of iron, potassium, magnesium, calcium, and folate. When you combine that with the banana, soy milk, and coconut milk, you get even more vitamins and minerals plus about 8 or 9 grams of protein. That’s a lot of nutrients for a 16 oz drink that only contains about 200 calories.

Ingredients
- 2/3 cup soy milk
- 1/3 cup coconut milk
- 1 cup baby spinach
- 1 frozen banana
- 1/4 tsp vanilla extract
Instructions
- Add all ingredients to a blender or food processor and blend until smooth.
