These chocolate covered coconut patties are a slightly healthier – and messier – homemade take on the packaged coconut patties sold in supermarkets and candy stores. They basically taste like a Mounds/Almond Joy bar, so if you’re a fan of those candy bars, you’ll surely love these. They’re very easy to make and they only take a few basic ingredients. You might already have all the ingredients you need in your pantry right now. Enjoy!

4-Ingredient Chocolate Covered Coconut Patties

Ingredients

  • 1 cup shredded coconut
  • 3/4 cup coconut milk
  • 1 cup dark chocolate chips
  • 1 handful almonds

Instructions

  1. Combine shredded coconut and coconut milk in a bowl with a spoon.
  2. Spoon with ice cream scoop onto parchment lined baking sheet.
  3. Top each dollop with some almonds and freeze for 30 minutes.
  4. After 30 minutes are up, melt the chocolate in the microwave 30 seconds at a time or in a double boiler.
  5. Use a fork to dip coconut balls in the chocolate and freeze again for another 30 minutes.
  6. Serve immediately or keep in the fridge until you're ready to serve.

Notes

We like the messy look of these patties, but if you want yours to look more like a commercial coconut patty – i.e., completely incased in chocolate – all you have to do is coat them more thoroughly than we did ours.

We recommend storing these in the freezer/fridge so they don't melt. If you plan on eating them within a short time, you can keep them in the fridge. If you want to store them for a long time – several hours or more – place them in a tupperware container and store in the freezer, then thaw when ready to serve.
