We love quiches. For months we’ve been talking about making this broccoli bacon cheddar quiche, and we finally got around to it. The “bacon” is tempeh-bacon, and the “cheddar” flavor comes from nutritional yeast and Daiya shreds. This was definitely one of the most flavorful quiches we’ve made. The crust is rich and flaky, and the filling has a nice blend of complimentary flavors and textures. We ate half of it for lunch and the half for dinner that same night. Enjoy!
Vegan Broccoli, Bacon & Cheddar Quiche
Tofu, tempeh-bacon, Daiya shreds, nutritional yeast, and broccoli come together in a perfect marriage baked inside a savory crust.
Ingredients
- 1 block extra firm tofu, drained and pressed
- 3 cloves garlic
- 1/2 cup nutritional yeast
- 1 tbsp lemon juice
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1/2 onion, chopped
- 6 strips vegan bacon, chopped (we used tempeh bacon)
- 2 cups broccoli (chopped into small pieces)
- 1 cup vegan cheddar
- 1 cup flour
- 1/2 tsp salt
- 1/4 cup olive oil, or vegan margarine
- 1/4 cup ice water
For the crust
Instructions
- Heat oven to 350 degrees.
- Prepare the crust by combining olive oil and salt together in a medium bowl.
- Add olive oil and ice water and combine to form a dough. (Do not over mix because it will become too doughy. Roll the dough out into a greased pie or cake pan and refrigerate while preparing the filling.
- Meanwhile, saute onions and bacon in oil over medium heat in a pan.
- After it browns, add broccoli and about 1 tbsp water and simmer until slightly tender, but still crunchy.
- Meanwhile, add the tofu, garlic, nutritional yeast, lemon juice, salt, pepper, onion powder, garlic powder, cayenne pepper, Italian seasoning, and olive oil to a food processor and blend until smooth. You can adjust the spices to your taste.
- Combine the tofu mixture with the broccoli and vegan bacon as well as vegan cheddar. Pour over the crust and bake for an hour until golden brown.
