Vegan Green Goddess Potato Salad
Rich and creamy potato salad slathered in an avocado and cilantro dressing. Makes a perfect side dish for backyard cookouts and parties.
Ingredients
- 1 avocado
- 2 tsp lime juice
- 2 tsp lemon juice
- 2 cloves garlic
- 1 tsp sea salt
- 1 tsp black pepper
- 2 tbsp tahini
- 1 large handful cilantro
- 1 tbsp olive oil
- 1/2 cup onion, diced
- 1 bunch arugula
- 1 cup peas
- 4 large potatoes, diced
Instructions
- In a saucepan, cover potatoes and bring them to a boil over medium heat.
- Cook until tender.
- Meanwhile, in a food processor, blend together the avocado, lime juice, lemon juice, garlic, salt, pepper, tahini, cilantro and olive oil.
- When the potatoes are done and cooled, add them to a large mixing bowl and combine with the rest of the ingredients.
