Biscuits and gravy in casserole form is brilliant. It’s a great dish to bring to a brunch or a potluck because it’s easy to transport and reheat, and it’s a total crowd-pleaser. We’ve been making vegan biscuits and gravy for a long time, but I think it’s safe to say this casserole is now our preferred method. It’s just so incredibly good!

Ingredients
- 1 can of your favorite biscuits or homemade biscuits
- 2 cups unsweetened almond or soy milk
- 1 tbsp vegan butter or margerine
- 1 package vegan sausage (I used Gimme Lean Veggie Sausage by LightLife)
- 3 tsp black pepper
- 1 tsp salt
- 3 tbsp flour
Instructions
- Heat oven to 450 degrees. Cut your biscuits into quarters with a sharp knife.
- Bake half of the quartered biscuits for 10 minutes until they begin to brown. Set aside other half of biscuits.
- Melt butter in a pan over medium heat.
- Add vegan sausage and break into small pieces. Saute sausage until browned.
- Add flour to pan, and more butter if necessary, and stir until flour is absorbed. Cook for 5 minutes.
- Add milk, salt and pepper to pan and stir continuously until the sauce thickens to a gravy.
- Pour gravy over baked biscuits.
- Top with the rest of the unbaked biscuit quarters and bake for 10-15 minutes until the biscuits are golden brown on top and gravy is bubbly.
Notes
I used The Minimalist Baker's recipe for vegan biscuits because they are really delicious and easy to make. I prefer to make this with almond milk because it is flavorless when you buy the unsweetened one but I often make it with soy because I always have soy milk in my fridge.
