This soup is one of our favorite recipes to make in the winter. It’s savory, filling, and comforting. It was originally inspired by a non-vegan soup I saw a picture of on Pinterest that used real sausage. We don’t get much snow in our neck of the woods, but when we do, we love to curl up on the couch with a piping hot bowl this hearty soup.
Vegan Sausage & Potato Soup
Ingredients
- 1 tbsp olive oil
- 1 package vegan Italian sausage, diced
- 3 cloves garlic,minced
- 1 small onion, diced
- 2 tsp Italian seasoning
- 2 tsp fresh basil, chopped
- 3 cups vegetable broth
- 1 cup unsweetened almond milk
- 3 large potatoes, diced and rinsed
- 3 cups spinach
- 1 tsp sea salt
- 1 tsp black pepper
- 1/2 tsp red pepper flakes
Instructions
- Heat oil in a large pot over medium heat.
- Add Italian sausage to pan and cook until browned.
- Stir in garlic, onions, spices and cook until onions are translucent.
- Add vegetable broth and bring to a low boil.
- Add potatoes and cook until tender, about 10 minutes.
- Stir in almond milk and spinach and cook 3 more minutes.
- Serve immediately.
