Healthy Vegan Fried Rice with Tofu & Mushrooms

Fried rice is a great Chinese dish that can either be served as a side or a main course, but unfortunately for vegans it traditionally contains eggs – tofu to the rescue! – Firm tofu basically has the same look and texture as scrambled eggs, so it makes the perfect egg replacer in this dish. Another problem with traditional fried rice is that it’s not exactly healthy because it’s usually made with white rice and refined vegetable oil. We created this healthy version by using brown rice instead of white, and substituting vegetable oil with a small amount of unrefined coconut oil.

Cook/Cool Time: 25 minutes

Total Time: 30 minutes

Healthy Vegan Fried Rice with Tofu & Mushrooms

Ingredients

  • 2 cups cooked brown rice – refrigerate night before for best results
  • 1/2 pkg firm tofu – rinsed and drained
  • 1/2 cup chopped white mushrooms
  • 1 cup peas
  • 1/2 sliced red onion
  • 4 cloves chopped garlic
  • 1/4 roasted sesame seeds
  • 1 1/2 tbsp soy sauce
  • 1 tbsp virgin coconut oil
  • 1/2 tbsp black pepper
  • 1 tsp yellow curry powder
  • 1 tsp sea salt

Instructions

  1. Pour the oil in a nonstick frying pan or wok and bring the oil to temperature by letting it simmer for 5 to 10 min on medium-high heat.
  2. Add the garlic and onion, and let simmer for 2 min.
  3. Add the tofu, peas, and any other veggies you like and let simmer for 5 to 10 minutes, occasionally stirring, until the tofu is slightly browned.
  4. Add rice, soy sauce and seasonings, and let simmer for 5 min, occasionally stirring.

Notes

Prep your veggies and tofu while the oil is heating to save time.
