Last month, we stocked up on cashews in bulk, and we couldn’t get enough of this cashew cheese. It was so good on sandwiches and crackers, but by far, our favorite way to eat it was on french bread with olive tapenade and balsamic dressing. If you like drinking wine, this goes great with a glass of your favorite red. Enjoy!
Balsamic, Olive & Cashew Cheese Toast
Ingredients
- 1 loaf french bread
- 1/2 cup raw cashews, soaked for an hour
- 1 clove garlic
- 1/4 tsp sea salt
- 1 tsp lemon juice
- 1 tbsp olive oil
- 1 tbsp nutritional yeast
- 1/4 cup olives
- 5 basil leaves
- 1/2 cup balsamic vinegar
- 1 tbsp sugar
- 1 tomato, sliced
Instructions
- Soak the cashews in a bowl with hot water.
- Meanwhile, in a small saucepan, heat balsamic vinegar and sugar over low heat and stir occasionally while it thickens.
- In a food processor, pulse together olives, basil and garlic until coarsely chopped.
- Remove from food processor and set aside.
- Drain cashews and blend them in the same food processor with the garlic, sea salt, lemon juice, nutritional yeast, and olive oil and nutritional yeast until creamy and set aside.
- Slice french bread into thick slices and toast in a pan or toaster.
- Spread the cashew cheese on each slice of toast and then top with tomato slices, olive mixture and drizzle with balsamic glaze.
