We used to live in Florida, where blackened grouper sandwiches are a thing. This is our vegan take on that, using blackened tofu instead of fish. This is the kind of sandwich that would cost you $7 to $10 at a restaurant or a food truck, but it’s incredibly cheap and easy to make on your own. We ate our sandwiches with Sriracha and mustard, but it would also be really good with vegan tartar sauce, which you could make by mixing vegan mayo with dill relish, lemon juice, salt and pepper.

Ingredients
- 1/2 pkg Tofu, pressed and sliced
- Cajun Seasoning
- Vegan Margarine or Vegetable Oil
- Fresh Hoagie Rolls
- Tomato, sliced
- Spinach or Lettuce
- Avocado, sliced
- Fresh Lime
Instructions
- Melt vegan margarine in a frying pan over medium heat.
- Coat the tofu in cajun seasoning and then fry it until it is blackened on both sides.
- Assemble the sandwiches and enjoy.
Notes
If you don't have cajun seasoning, you can make your own by mixing together the following spices: salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme, and crushed red pepper.
