Yesterday, I went on a 3-hour, 9-mile hike after doing calisthenics for about 30 minutes. Suffice it to say, my muscles were pretty sore when I woke up this morning, so I wanted to eat a really healthy breakfast that would help me recover quickly. I wanted something light, high protein, and easy to digest. So I came up with this vanilla strawberries and cream chia seed pudding.
It only has good stuff in it, like fresh berries, nuts, and chia seeds; no added sugar or artificial sweeteners, just natural goodness. That being said, as some of you may already know, when I make something healthy, I also demand that it be delicious. I’m not going to eat something that tastes like cardboard just because it’s healthy. I had a feeling this pudding would taste good, but I was surprised by how delicious it ended up being. Even if you’re not trying to eat health, you should still try it simply because it tastes so good and is so easy to make.
This strawberries and cream chia seed pudding makes the perfect nutritious breakfast or healthy dessert. It's light, creamy, fruity, and easy to make.
Ingredients
- 1 cup soy milk
- 3 tbsp chia seeds
- 5 fresh strawberries
- Handful of nuts
- 1/2 tsp vanilla extract
Instructions
- Add all ingredients to a jar with a lid and shake thoroughly.
- Chill in the fridge overnight or for at least 15 minutes. The longer the better. I let mine chill for 2 hours.
