Every week I love to look in the produce drawer in my fridge and make a recipe out of the veggies I have on hand. This week, I found a bunch of zucchini that my mom bought the previous week that were starting to go bad. I also had one large carrot that needed to be used so I decided to turn them into fritters. I’ve made zucchini fritters quite a few times before so it was very easy to whip up a batch of them for dinner.
The term fritter is used to describe a variety of fried foods that consist of a portion of batter combined with either meats, fruits, vegetables or other ingredients. There are three types of fritters: The first are plain fritters, which are deep-fried cakes of a yeast dough, like beignets; the second are small pieces of meat, vegetables or fruit which are coated in a batter and fried; the third type of fritter are cakes consisting of finely chopped or grated pieces of meat, vegetables or fruit that are mixed with batter and fried. These Zucchini fritters are the third kind.
I have to say that I haven’t really experimented with other types of fritters, but seeing as they are so versatile and easy to prepare, I am looking forward to trying out different combinations of ingredients. If you try this recipe, let us know how it turns out by leaving a comment below.
