Vegan Stuffed Mushrooms

These are the best vegan stuffed mushrooms! I’ve made them twice and both times they were soooo good. It really doesn’t take long to make them and when they come out of the oven they smell heavenly. Make sure you let them cool for a few minutes before you devour them because they will be hot!

Prep Time: 10 minutes

Cook/Cool Time: 50 minutes

Total Time: 60 minutes

Vegan Stuffed Mushrooms

Ingredients

  • 8 big mushrooms (doesn't really matter what kind, as long as they are big enough; take out the stems and chop them up)
  • 1 small onion, finely chopped
  • 1 Tbsp jalapeno, finely chopped (use less if you don't want it spicy)
  • 1/4 cup vegan chorizo
  • 2 cloves garlic, chopped
  • 1/2 tsp sea salt, fresh ground pepper, smoked paprika
  • 1 big bunch ripped up spinach
  • 1/4 cup vegan cream cheese
  • 1 Tbsp cilantro, chopped
  • 1 Tbsp green onion, chopped
  • 1/4 cup Panko breadcrumbs

Instructions

  1. Sauté onion, jalapeno, mushroom stems, chorizo, garlic and spices over medium heat for 10-15 minutes until onions are translucent.
  2. Add spinach and cook for about 5 minutes until spinach is wilted.
  3. Turn off heat and stir in cream cheese.
  4. Let cool and mix in cilantro and green onions.
  5. Stuff each mushroom with a scoop of cream cheese mixture.
  6. Cover with breadcrumbs and bake for 30-40 minutes.
