In this video we show you how to make a quick vegan coconut curry with kidney beans, potatoes, carrots and peas. With this recipe you can add your own vegetables or even tofu. Cook rice according to directions (Jasmine Rice is my personal favorite). Serve over Jasmine rice and top with fresh cilantro and crushed peanuts.
Vegan Coconut Curry Ingredients:
- 1 cup Jasmine rice (cooked according to directions)
- 1 tbsp coconut oil (or any oil of your choice)
- 1 onion, chopped
- 2 tbsp curry spice
- 1 cup potatoes (about 2 medium)
- 2 cloves garlic, chopped
- 2 tbsp soy sauce
- Salt, pepper, crushed red pepper (to taste)
- 1 cup carrots (about 2 medium)
- 1 can coconut milk
- 1 cup kidney beans, cooked
- 1 cup peas (fresh or frozen)
- fresh cilantro
- crushed peanuts
