The Not Company must’ve learned a thing or two from Hampton Creek’s problems, because they are not mincing words, they tell customers exactly what they aren’t: They are Not Mayo, Not Milk, Not Yogurt, and definitely Not Cheese. They are, however, a vegan brand from Chile that will be hitting the shelves of Walmarts all across the US sometime by or before 2019.
The high-tech food company uses a computer program called “Giuseppe” to analyze foods on the molecular scale and replicate them using only plant-based ingredients. While this sounds like the perfect way to make a mysterious slurry of chemicals and additives, the company seems determined to use only natural ingredients. Their plant-based mayo, for example, consists of chickpeas, water, and salt. Not sure if Giuseppe was really necessary for that recipe, but apparently it’s working, because the company is doing well enough in the few South American countries it currently occupies to workout a deal with Walmart, the largest retailer in the world.
Walmart will be stocking The Not Company’s signature Not Mayo. Not Yogurt, Not Milk, and Not Cheese have yet to come out, but they are poised to go through the company’s normal distribution channels sometime in the next few months, and will presumably make their way to Walmart, as well.
