How to Make Vegan Chicken from Scratch
If you want to save a lot of money and have more control over what goes in your food, you can make your own homemade vegan chicken from scratch. It’s similar to the kind of faux chicken you might get at a restaurant or buy from the grocery store. The main ingredient you will need is vital wheat gluten, which you can buy online or find at most supermarkets and health food stores. From there, it’s just a matter of adding the right flavors and spices.
This is an all-purpose “chicken” recipe that you can use for any type of chicken dish, like fried chicken, stir-fry, etc… We just used this the other day for our Thai Red Curry recipe. We also used it to make vegan KFC. It’s very similar to the seitan recipe we use to make vegan ground beef/sausage, the main difference being how it’s seasoned. Enjoy!
Ingredients
- 1 1/2 cups vital wheat gluten
- 1 cup vegetable broth
- 1/3 cup nutritional yeast
- 3 tbsp olive oil
- 1 tsp apple cider vinegar
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp cumin
Instructions
- Heat oven to 350 degrees.
- Combine wheat gluten, nutritional yeast and spices in a large mixing bowl.
- In a separate bowl, combine wet ingredients.
- Add wet ingredients to dry ingredients and stir until combined.
- Use your hands to knead the dough for a few minutes.
- Form the dough into 4 equal sized pieces resembling a chicken breast or any shape you like.
- Place in an oven-safe dish with a lid, and bake for 30 minutes on each side.
Notes
If you want a blander, more neutral flavor, use water in place of vegetable broth.
We've received a couple of comments from readers saying the baked seitan is too hard and/or dry for their liking. If you like a softer, moister texture, we suggest adding an inch of water or veggie broth to your casserole dish to keep it moist in the oven, or boiling the seitan instead of baking it.
