A couple days ago Taryn made this great salad with homemade strawberry balsamic compote. While we were devouring the salad, Taryn suggested having grilled cheese for dinner, and that’s when it hit me… What if we put the strawberry compote on our grilled cheese sandwiches? Well, we did and it was phenomenal. The combination of sweet and savory took this grilled cheese to another level. Enjoy!
Gourmet Vegan Grilled Cheese w/ Strawberry Balsamic Compote
Ingredients
- 4 slices sourdough bread or bread of choice
- 1/2 cup vegan cheese – we used Daiya mozzarella shreds
- 1 cup strawberries, chopped
- 1/2 cup balsamic vinegar
- 1 tbsp sugar
- 1/2 red onion, thinly sliced
- 1 handful arugula
- Vegan margarine – we used Earth Balance
- This recipe makes 2 sandwiches
Instructions
- Add strawberries, balsamic vinegar and sugar to a small saucepan over medium heat. Once it reaches a boil, lower heat and cook until it reduces to a thick compote (about 5-10 minutes).
- Assemble the sandwich by layering compote on both sides of bread. Add arugula, onion and cheese and lightly butter the outside of both pieces of bread. Grill the sandwich in a non-stick pan over medium heat until cheese is melted and bread is golden brown.
