Every vegan cook should become a master at stir-frying. It’s one of the quickest, healthiest, and tastiest ways to whip up a vegan meal with just a handful of simple ingredients. Having a wok helps if you’re cooking over an open flame, but a regular non-stick frying pan does the job just fine. I first learned how to stir-fry out of necessity… I was getting sick of eating canned beans and frozen burritos every night, and I knew I could be making my own tofu and veggie dishes at home, so I started experimenting with stir-frying.
The one thing I love the most about stir-frying is how free you can be with it. If you look up a recipe, but you’re missing one or two of the ingredients it calls for, no big deal, just improvise or go without. Sometimes you don’t even need a recipe, you can just mix together whatever random veggies you have in your fridge, and it turns out just fine.
