Yum. This vegan leek and potato soup is really delicious and the best way I know how to use leeks. If you are bored with the same old creamy soups, you should try this savory recipe. It’s perfect for having company over too.
Vegan Leek and Potato Soup Ingredients:
2 cups leeks, washed very well and sliced (leeks tend to have dirt in rings so make sure you wash them until the water runs clean)
5 small potatoes, cubed (about 3 cups)
2 cloves garlic, minced
1 tsp crushed red pepper
1 tbsp olive oil
3 cups vegetable broth
1/2 cup dairy-free milk
If you want to be fancy, you can add some chopped parsley and vegan bacon bits as a garnish. Make sure you wash your leeks very well because usually there is a lot of dirt between each layer.
