For years I have been wanting to buy Chia seeds and add them to my diet, but I could never justify paying such a high price for them. But last month, while I was shopping at Winco (an employee owned grocery store in the northwest with the best bulk section ever), I saw Chia seeds in the bulk section for $3.15 per pound. I bought a 1/2 lb. bag right away and couldn’t wait to get home and try it.
I learned quite quickly why they are so popular and I am glad I finally got around to buying my own bag. I have been putting them in everything from smoothies, to coffee, infused water, and last night, my vegan eggnog. Once a year, we spoil ourselves by getting a small carton of vegan eggnog so I thought it would be great as a Chia seed pudding. And it was. The only brand we’ve tried is Silk, and it’s delicious, but I’m sure there are some other really good brands out there too so you can try Eggnog Chia Seed pudding for yourself.
Ingredients
- 1 cup eggnog
- 3 T Chia seeds
- Dash of cinnamon, nutmeg and cloves
Instructions
- Combine ingredients in a jar with a lid and shake vigorously.
- Refrigerate overnight or at least for 1 hour.
Notes
The next day, I added an extra splash of eggnog to make it a little bit smoother.
