It’s been at least 5 years since the last time I had a Caesar salad and I’ve missed it so much. It has never really occurred to me that I could make my own vegan Caesar dressing. I had always assumed that it would just be one of those foods that I will never eat again, but today, I had a craving for it. I looked in my fridge and realized I had plenty of ingredients to make something very similar to real Caesar dressing, so I gave it a shot.
It took some time to get the dressing just right, but it was definitely worth it. This dressing is really creamy and very flavorful. I can’t say that it tastes exactly like traditional Caesar dressing, but I will say that this dressing is really delicious and it most definitely satisfied my craving for a hearty, zesty, crunchy salad. The dressing is really luscious and has an incredible tangy flavor. I’m glad I made a lot of it because everyone in my family had some with their salads for dinner and they loved it.
I had some pitas in the fridge, so we decided to eat our salads as wraps to make them a little heartier. It was great with the pita bread, but I’m sure it would also be good wrapped in a tortilla or in between two slices of crusty bread.

Breaded vegan chicken strips, crunchy croutons, crisp romaine lettuce, and a creamy dressing. Serve as a salad or a wrap.
Ingredients
- Shredded romaine lettuce
- 1 package vegan crispy chicken (I used Gardein Chipotle Lime Chicken Fingers)
- Vegan Croutons (Rothbury Farms found at most supermarets)
- Pitas
- 1 cup raw cashews, soaked overnight
- 1/2 cup water
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tbsp soy sauce
- 1 tbsp dijon mustard
- 1 tsp capers
- 2 tsp caper brine
- 1 tbsp tahini
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp shredded nori
Instructions
- Prepare chicken according to package directions.
- In a food processor or blender, add the cashews and water and blend for a minute until smooth.
- Add the rest of the ingredients and blend again for a minute until the dressing is luscious and creamy.
- Toss the romaine lettuce and croutons in the dressing.
- Wrap the salad and chicken in a pita and serve immediately.
