A while back we made two discoveries that have transformed our cooking forever. First, we realized that making your own ranch mix for ranch flavors and dressing is extremely easy. Second, we realized that liquid smoke is basically a miracle in a bottle. Suffice it to say, this salad is smokey and ranch-y, and we love it!
Smoky Tofu & Ranch Salad
Ingredients
- 1 cup raw cashews, soaked overnight
- 1/4 tsp dill
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp onion flakes
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- 1/4 tsp lemon juice
- 1 tbsp parsley, chopped
- 1 tbsp chives, chopped
- 1 tsp oil
- 1 block tofu, pressed and cubed
- 1/4 tsp liquid smoke
- 1/4 cup soy sauce
- 1 tsp red pepper flakes
- 1 tsp garlic, minced
- 1/4 cup water
- 1 tsp cornstarch
- Large bowl of lettuce
- 1 cup corn
- 1 small red onion, thinly sliced

Instructions
- Combine the ingredients for the tofu marinade and marinate the tofu while you are preparing the other ingredients.
- Prepare the dressing by combining the ingredients in a food processor and blending until smooth, adding a bit of water when necessary. Refrigerate until ready to eat.
- Heat oil in a pan over medium heat.
- Add the tofu and cook until browned on all sides, about 15 minutes.
- Add the tofu to the salad and drizzle with ranch dressing. Serve immediately.
Notes
I took some of this salad to work with me the next day and it was still really good.
