I’ve always been a huge fan of condiments, and I love coming up with sauces and spreads, especially if I can put a unique twist on them. Last week, while Taryn was perfecting our newest veggie burger recipe, she challenged me to create a sauce that would compliment the burgers nicely, and this “smoky and tangy” vegan aioli is what I came up with.
I could have just mixed some garlic powder with Vegenaise and called it a day, but I wanted this aioli to have a little zing and a little pep. Along with garlic, salt, and pepper, I added a few drops of liquid smoke to give it a smoky flavor I thought would go well with the burgers. I also mixed the mayo with tahini. The tahini added creaminess and thickness to the texture while also enhancing the smoky flavor. Lastly, I squeezed in some lime juice to balance everything out and give it a little tanginess.
Hope you enjoy!
