These vegan croissants are so easy to make and are very tasty. The tofu scramble tastes very similar to actual scrambled eggs with sausage and even my nonvegan friends have loved these. I make them every time I go for brunch at someone’s house and they are also great for picnics, but they taste best when they are right out of the oven!
Savory Vegan Croissant Ingredients:
1 roll of crescent rolls (most brands are vegan)
1 tbsp coconut oil
1 onion, diced
1 package vegan breakfast sausage (I use Gimme Lean sausage because it’s what is available at my local grocery store)
1 package firm tofu, pressed and crumbled
Salt and pepper
1/2 tsp Seasoned Salt
1/2 tsp Italian seasoning
1/2 tsp crushed red pepper
1 garlic clove, chopped
1 1/2 cup mushrooms, chopped
2-3 tbsp chives, finely chopped
1/2 cup vegan cheese (I can usually find Daiya mozzarella style cheese at most grocery stores)
