If you’re looking for a great dinner salad that is healthy and loaded with fresh veggies, this marinated vegetable salad is the perfect choice.
Marinated Vegetable Salad
Ingredients
- 1 zucchini, julienned
- 1 cucumber, julienned
- 1 cup cremini mushrooms, sliced
- 1/2 cup broccoli
- 1 onion, sliced
- 1/2 cup nuts or seeds
- 1 avocado, sliced
- sunflower seeds
- dates, chopped
- 2 garlic cloves, minced
- 1/2 cup balsamic vinegar
- 1/4 cup good quality olive oil
- 1 tbsp lemon juice
- 1 tsp sea salt
- 1 tsp cracked pepper
- 1 bunch basil, roughly chopped
- 1 tsp thyme
For the marinade
Instructions
- Combine ingredients for marinade in a large bowl and whisk together.
- Add the zucchini, mushrooms, broccoli, onions and seeds and toss together until evenly coated.
- Refrigerate for at least 30 minutes (it's great refrigerated overnight too)
- Top with avocado, sunflower seeds and dates right before serving.
